About Saffron
Saffron is the most luxurious spice, common to Mediterranean, Eastern and some European recipes. In foods, saffron is used as a spice, yellow food coloring, and as a flavoring agent.
In manufacturing, saffron extracts are used as fragrance in perfumes and as a dye for cloth. Saffron is graded via laboratory measurement of crocin (colour), picrocrocin (taste), and safranal (fragrance) content. Determination of non-stigma content ("floral waste content") and other extraneous matter such as inorganic material ("ash") are also key. Grading standards are set by the International Organization for Standardization, a federation of national standards bodies.
ISO 3632 deals exclusively with saffron and establishes four empirical colour intensity grades: IV (poorest), III, II, and I (finest quality). Samples are assigned grades by gauging the spice's crocin content, revealed by measurements of crocin-specific spectroscopic absorbance.
The world's finest samples are those most red tips of saffron stigmas. Market prices for saffron types follow directly from these ISO scores. Despite such attempts at quality control and standardization, an extensive history of saffron adulteration-particularly among the cheapest grades-continues into modern times
